Product Introduction This is a dried koji made by craftsmen using only organic JAS certified brown rice from Okayama prefecture. It was dried slowly with warm air to prevent the bacterium from being broken. It can be used for amazake and miso salt koji making. * If you add boiling water when you use it, the koji mold will weaken, so be careful not to exceed 60 degrees or more.
