DESCRIPTION
Haradano Koji is a raw type of koji using 100 % rice from Yamagata Prefecture. In order to make high -quality koji that cannot be made with a mechanical koji machine, we still handmade one by one with koji (koji lid method).
* Horada Koji is made of 4 bags with one board, and when it is completed, it is flattened and divided into four equal parts.
Please note that all of them may increase or decrease by about 10 % depending on the degree of drying for all manual work.
