It is a buckwheat produced in a unique disturbed weaving method that adds unevenness to the noodles under the cool air of Shinshu Kaika Plateau and the water from the foot of Mt. Kiso Mitake. The disturbed weaving method is a different manufacturing method that has a distinctive tension of the noodles when boiling with unevenness and boiling.
