Use Sudachi juice and yuzu juice. I combined my own Hokkaido Rishiri kelp and the best dashi from Makurazaki, Kagoshima Prefecture. It is a flavored vinegar with a good balance of refreshing citrus juice and the best umami. You can enjoy it deliciously not only for hot pots and tofu, as well as grilled salads.
